Regional, seasonal and usually hearty culinary delights on the mountain pastures of SalzburgerLand delight the taste buds. Filled ‘Bladln’ dumplings, sweet doughnuts, ‘Kasnockn’ traditional cheese gnocchi or a typical Salzburg ‘Brettljause’ lunch with a mixed meat platter is incentive enough to speed up the hike to the top.

On the high mountain pastures where cows and calves find the best meadow flowers and herbs during summer, you can also taste the Alpine Summer in the fresh products. Cows are brought from the meadows every day for milking and butter and cheese is churned and matured according to tradition. At first bite, when the eyes close to savour the moment, you will hear the contented cows mooing and smell the spicy aroma of alpine herbs.

Luminous rosebushes, fresh rosemary and delicious parsley are just a few of the wonderful plants which thrive in the Salzburg Lake District and are well-known for their healing power.

Bauernherbst is a time when regional and farm products are especially enjoyed. There are numerous cookery classes where the farmer’s pass on recipes which have be handed down from generation to generation. Lungauer Schnapssuppe, Flachgauer Bockbeidei, Pongauer Goaskasreindl, Pinzgauer Kasnockn and Tennengauer Almochsengulasch are all specialities that are served during harvest festival time.
