Apple cake in a casserole with crumble topping

Enjoy a delicious homemade slice of apple cake along with a cup of tea or coffee. This certainly is one of the best ways to start your relaxed afternoon.

Apple Cake

  • 2 cups (350g) apples, peeled and cut into large cubes, soaked in lemon juice
  • 2 3/4 cup (250g) pastry flour
  • 3/5 (150g) butter
  • 1 1/8 (150g) powdered sugar
  • 3 eggs
  • 1/2 cup (125ml) cold milk
  • 2 teaspoon (8g) vanilla sugar
  • 5 teaspoon (16g) baking powder

Crumble topping
  • 1/3 cup (90g) butter, very soft
  • 1/2 cup (90g) granulated sugar
  • 1/2 cup (45g) almonds, ground
  • 3/5 cup (65g) all-purpose flour
  • 1 pinch of salt
  • 1 pinch of cinnamon, ground
  • 3 level tablespoon almond slivers
  • 1 teaspoon (4g) vanilla sugar


Crumble topping

Beat butter with sugar, vanilla sugar, salt, and cinnamon until soft, mix in almonds and flour, and then leave to stand in a cool place.

Apple cake

Cream butter, sugar, and vanilla sugar well, then gradually whisk in the eggs. Mix flour with baking powder and sift into the mixture.
Add milk until it becomes a foamy batter. Carefully add the dieced apples with a wooden spoon. Pour the mixture into a buttered and floured form of about 10 x 8 inches and bake in a preheated oven for 15minutes at 340°F (170°C).

Crumble the topping with your hands, sprinkle onto the cake together with almond slivers, and bake for another 25 - 35 minutes until done. Total baking time e 40 - 50 minutes.
