{"id":6637,"date":"2020-05-14T14:08:09","date_gmt":"2020-05-14T12:08:09","guid":{"rendered":"https:\/\/www.salzburgerland.com\/nl\/?p=6637"},"modified":"2020-05-19T14:27:14","modified_gmt":"2020-05-19T12:27:14","slug":"het-recept-voor-sacher-cake","status":"publish","type":"post","link":"https:\/\/www.salzburgerland.com\/nl\/het-recept-voor-sacher-cake\/","title":{"rendered":"Het recept voor Sacher Cake"},"content":{"rendered":"<h3><strong>Ingredi\u00ebnten<\/strong><\/h3>\n<p>40 gram boter, 110 gram suiker, de zaden van een \u00bd vanillestokje, 6 eieren, 130 gram pure chocola, 140 gram meel, 200 gram abrikozenjam, boter en meel voor de bakplaat, chocolade creme of slagroom voor de versiering<\/p>\n<p><strong>Voor choclade glazuur<\/strong><\/p>\n<p>200 gram suiker, 125 gram water, 150 gram pure chocola<\/p>\n<p><strong>Bereiding<\/strong><\/p>\n<p>Voor de Sacher Cake \u201calla Sacher\u201d meng je de zachte boter met de suiker en de vanille om een cr\u00e9me te krijgen. Voeg dan langzaam de dooiers van de eieren 1 voor 1 toe en klop tot een dikke schuimige massa. Smelt de cocholade in de oven en meng met de massa. Klop de eiwitten stijf en voeg de suiker toe, blijf kloppen tot de massa stevig en glanzend is. Voeg de eiwitten toe aan de eierdooiermassa, zeef er de bloem overheen en roer zachten met een pollepel.<\/p>\n<p>Smeer van de ronde taartvorm met boter en bloem tot de rand in. Giet de massa in de vorm en bak deze in een voorverwarmde oven op 170 graden gedurende 55 tot 60 minuten. Laat de taart vervolgens ongeveer een uur afkoelen. Verwijder het blik en snijd de taart horizontaal doormidden met een scherp mes. Verwarm de abrikozenjam lichtjes, meng het tot een homogeen mengsel, dek beide schijven van de basis af en stel de taart opnieuw samen. Bestrijk de randen met de jam en laat deze een beetje drogen. Smelt vervolgens de chocolade in een bain-marie en doe er boter in. Blijf roeren tot je een dik glazuur krijgt. Giet al het nog warme (mag niet te heet zijn) glazuur in \u00e9\u00e9n keer en spatel op de randen slechts het minimaal noodzakelijke. Laat de Sacher cake enkele uren drogen, tot het glazuur goed uitgehard is.
