For her visit, Resi Schafflinger prepared two traditional Advent specialties, which, at second glance, turned out to be real superfoods: a punch made of black elderberries and a typical Gasteiner fruitcake served with cheese. In the Alps, elders are said to have magic potency: ghosts allegedly live in them and whoever passes by has to raise the hat. That\u2019s how manifold its uses and virtues are. A true powerhouse, however, is the fruitcake: it combines the autumnal harvest from the farmer\u2019s orchard with dried pears and plums.<\/p>\n<div id=\"attachment_186950\" style=\"width: 1180px\" class=\"wp-caption alignnone\"><img decoding=\"async\" aria-describedby=\"caption-attachment-186950\" class=\"size-1170_658 wp-image-186950\" src=\"https:\/\/cdn.salzburgerland.com\/en\/wp-content\/uploads\/2017\/10\/alexandra-meissnitzer-und-resi-schafflinger-slt-meisis-reise-slt-michael-grossinger-img_1287-1170x658.jpg\" alt=\"Alexandra Meissnitzer meets Resi Schafflinger in Gastein\" width=\"1170\" height=\"658\"><p id=\"caption-attachment-186950\" class=\"wp-caption-text\">\u00a9 SalzburgerLand Tourismus, Michael Gr\u00f6\u00dfinger, Alexandra Meissnitzer meets Resi Schafflinger in Gastein<\/p><\/div>\n<h2>Recipe \u201eGasteiner Fruitcake\u201c (<span id=\"urn:enhancement-dd944b56-72fe-d763-8507-3217f67e6ea9\">Ingredients<\/span> for 2 cakes)<\/h2>\n<p><strong>Time needed including resting time: 2 days:<\/strong><\/p>\n<ul>\n<li>Assortment of fruit, resp. stuffing: (prepared the day before)<\/li>\n<li>500 g dried pear, to be soaked in water, finely chopped<\/li>\n<li>250 g prunes<\/li>\n<li>250 g figs<\/li>\n<li>100 g raisins<\/li>\n<li>100 g walnuts<\/li>\n<li>150 g hazelnuts<\/li>\n<li>100 ml fruit brandy or Rum<\/li>\n<li>Spices: \u00bd tsp. cinnamon, \u00bd tsp. ground cloves, 1 tsp. gingerbread seasoning<\/li>\n<li>Juice and zest from 1 lemon and the zest from one orange<\/li>\n<\/ul>\n<p>Chop or cut into strips the soaked pears, <span id=\"urn:enhancement-cb8348bd-fc76-81a0-0b35-6a3f51a1eb99\">prunes<\/span> and figs. The nuts can be left in their original shape or minced. Mix all the remaining <span id=\"urn:enhancement-85bf89ac-ac37-0942-518f-51ca8a50fb20\">ingredients<\/span>, heat over the alcohol and mix in. Cover the mixture well and allow to infuse over night.<\/p>\n<p><strong><span id=\"urn:enhancement-b9446400-4e40-ecdf-071c-c973bf7cdc5a\">Ingredients<\/span> for the <span id=\"urn:enhancement-de5e2396-7e2f-7cb0-6c22-f678922ad4ba\">bread<\/span> <span id=\"urn:enhancement-9403f819-ea56-6828-7883-24a5199c814f\">dough<\/span>:<\/strong><\/p>\n<ul>\n<li>500 g <span id=\"urn:enhancement-8c4d8c05-0184-40dd-cfae-25c9de46c531\">rye<\/span> <span id=\"urn:enhancement-f589ed65-6e5d-41c0-d0f2-dd6bd27b9b9e\">flour<\/span><\/li>\n<li>500 g <span id=\"urn:enhancement-da04d943-6f05-4ecd-5e61-718e698f2532\">wheat<\/span> <span id=\"urn:enhancement-1d4a5b33-816b-b3b8-14b9-4bfb994de05f\">flour<\/span><\/li>\n<li>\u00bd <span id=\"urn:enhancement-20cc643c-4167-2a35-3130-fd53d1b82ddc\">yeast<\/span> cube or 1 sachet of dried <span id=\"urn:enhancement-2e7a4479-0a43-34cb-7438-d1d840d6417b\">yeast<\/span><\/li>\n<li>1 <span id=\"urn:enhancement-8772d156-9336-7a83-bfb9-3492543fe208\">tsp.<\/span> sugar, 1 tbsp. salt, 1 tbsp. <span id=\"urn:enhancement-5b9320a3-4911-435b-4c3e-d418a69e5fbc\">bread<\/span> <span id=\"urn:enhancement-2f58da60-4277-a059-694a-75739f19d4a0\">seasoning<\/span> (fennel, coriander, cumin)<\/li>\n<li>\u00bc <span id=\"urn:enhancement-637496c3-2052-71bf-b035-0a4e6346e029\">litre<\/span> buttermilk, <span id=\"urn:enhancement-34dc51a6-afa6-0ed0-ef56-60e4ffd555a1\">ca.<\/span> \u00bd <span id=\"urn:enhancement-27ac369f-6c08-5013-fcb2-1a5f2356e9df\">litre<\/span> water (luke-warm)<\/li>\n<\/ul>\n<p>Prepare the <span id=\"urn:enhancement-a2154152-7d57-139b-ab86-c3d429e8051a\">bread<\/span> <span id=\"urn:enhancement-9e625254-b222-ce3e-641d-36bd9da11b99\">dough<\/span> the following day and let it <span id=\"urn:enhancement-4a80945d-6568-75d8-5a6c-bd5d489cbb07\">rise<\/span> for one hour.<\/p>\n<p><strong>There are 2 ways of continuing:<\/strong><\/p>\n<ul>\n<li><span id=\"urn:enhancement-e49cadfe-c5bb-8c56-d352-2da5848269d3\">Knead<\/span> the <span id=\"urn:enhancement-771fdec8-44b0-a84f-69e5-1e94f11be056\">bread<\/span> <span id=\"urn:enhancement-9bdfe075-4fbc-e057-7e30-aee09975102e\">dough<\/span> with the fruit mixture, and form the <span id=\"urn:enhancement-f26d7c5d-bc59-b2ba-3aba-9a2b72c46578\">dough<\/span> into <span id=\"urn:enhancement-7526de4a-e192-fd73-d5cc-f3d626e00685\">buns<\/span> or <span id=\"urn:enhancement-d9bc2e8c-bef3-676f-8c7b-f60a96ef2f70\">loaves<\/span>, or<\/li>\n<li><span id=\"urn:enhancement-eb03b2a1-50f2-1528-7209-7c0a7dd455a6\">Knead<\/span> 2\/3 of the <span id=\"urn:enhancement-4b9ecffb-1320-d49b-03ba-297626ab6b8e\">bread<\/span> <span id=\"urn:enhancement-1f6b8728-97b5-950e-5585-46abc7c9bd81\">dough<\/span> with the fruit mixture and <span id=\"urn:enhancement-a29e784c-74eb-e0c4-2dcf-ab283329b7eb\">roll<\/span> the remaining 1\/3 and use it to coat the <span id=\"urn:enhancement-99e803b8-5d73-1f03-39b7-d5c3c404e239\">buns<\/span>.<\/li>\n<\/ul>\n<p>Let the bread rise for another 20 minutes and bake it in the preheated oven at 200\u00b0C for ca. 15 minutes, then bake it for another hour at 180\u00b0C. If there is no coat, cover the fruitcake with backing paper as soon as it has the desired colour, so that the fruits don\u2019t burn.<\/p>\n<p>In the Gastein Valley, the fruitcake is served with ripe alp cheese. It is also very tasty with butter. During wintertime in SalzburgerLand, the fruitcake is served in the afternoon as an alternative to coffee and cake. Strain the <span id=\"urn:enhancement-23959267-8c05-88eb-3d90-0e80a9856dca\">spices<\/span> through a <span id=\"urn:enhancement-c49d5ebf-77bb-85f0-65dd-da668f033596\">sieve<\/span>, add 250 ml of <span id=\"urn:enhancement-4c985fa9-695e-0bef-2c45-d8bd9660a4c8\">elderberry<\/span> <span id=\"urn:enhancement-7e2634db-0272-520a-2009-1ad423347b80\">syrup<\/span>. Quickly warm the punch.<\/p>\n<p>If you want to make the <span id=\"urn:enhancement-c9af2f52-f5fd-9997-1d74-e54de06d58f9\">elderberry<\/span> <span id=\"urn:enhancement-134ec56f-f4d2-531f-e34c-9974ad3ac9b3\">syrup<\/span> yourself, you need to harvest <span id=\"urn:enhancement-3b5d17c2-9d51-779c-79df-45cf267dbeff\">ripe<\/span> berries in the summer: they are juiced with the help of a steam juicer and sweetened at discretion.
