In diesem saftigen Fr\u00fcchtebrot steckt einfach alles, was die Natur vor Wintereinbruch zu bieten hat: Mehl von Roggen und Weizen, N\u00fcsse, ged\u00f6rrte Birnen und Rosinen sowie allerhand Gew\u00fcrze wie Zimt, Nelken, Anis und Fenchel. Bauern haben das Kletzenbrot schon vor hunderten Jahren als nahrhafte Winterkost gebacken, um mit ausreichend Energie w\u00e4hrend der kalten Jahreszeit versorgt zu sein. Kinder k\u00f6nnen mit dem Kletzenbrot meist noch wenig anfangen, weil es nicht besonders s\u00fc\u00df schmeckt.<\/p>\n<p>Der Weihnachtsklassiker wird bereits fr\u00fch im Advent gebacken. Denn je l\u00e4nger das Brot durchzieht, umso saftiger wird es. Gegessen wird es zum Nachmittagskaffee mit einer dicken Schicht Butter oder mit rassigem Bergk\u00e4se, wie es im Salzburger Gasteinertal der Brauch ist.<\/p>\n<p><strong>Rezept f\u00fcr 4 bis 5 Kletzenbrote<\/strong><\/p>\n<p>F\u00fcr die F\u00fcllung:<\/p>\n<p>500 g Kletzen (D\u00f6rrbirnen)<br>\n500 g Rosinen<br>\n500 g ganze Haseln\u00fcsse<br>\n20 g Orangeat<br>\n1 geh\u00e4ufter TL Zimt, gemahlen<br>\n1 geh\u00e4ufter TL Nelken, gemahlen<br>\n2 Pkg. Vanillezucker<br>\nabgeriebene Schale einer Bio-Zitrone<br>\n125 ml Rum<br>\n1 Prise Anis<br>\n1 Prise Fenchel<br>\n1 gro\u00dfe Hand voll Rohrohrzucker<\/p>\n<p>F\u00fcr den Teigmantel und die Fr\u00fcchte-Teiglinge:<\/p>\n<p>1 kg Roggenmehl Type 610 oder 997<br>\nI kg Weizenmehl Type 405<br>\n2 W\u00fcrfel Hefe (84 g)<br>\n1 EL Salz<br>\n1 Prise Zucker<br>\n1 EL \u00d6l<br>\nlauwarmes Wasser<\/p>\n<p>Am ersten Tag die Kletzen weichkochen, abk\u00fchlen lassen und mit einem Wiegemesser fein wiegen. Alle Zutaten f\u00fcr die F\u00fcllung vermengen und \u00fcber Nacht durchziehen lassen. Eventuell eine kleine Menge vom Kochwasser der Kletzen zur F\u00fcllung geben.<\/p>\n<p>Am n\u00e4chsten Tag den Brotteig zubereiten: Dazu alle Zutaten in einer gro\u00dfen Sch\u00fcssel vermengen. In kleinen Mengen so viel lauwarmes Wasser beif\u00fcgen, bis durch kr\u00e4ftiges Kneten ein glatter, fester Teig entsteht. Den Teig eine Stunde gehen lassen, dann noch einmal kneten.<\/p>\n<p>Nun die Fr\u00fcchte f\u00fcr die F\u00fcllung abwiegen und in vier bis f\u00fcnf gleich schwere Portionen teilen. Pro Frucht-Portion 300 g Brot-Teig unterkneten und alles zusammen zu einem Laib formen. So entstehen vier bis f\u00fcnf Brote. Den restlichen Kletzenbrot-Teig d\u00fcnn auswalken, in gleich viele St\u00fccke schneiden wie Kletzenbrote und die Fr\u00fcchte-Teiglinge damit umh\u00fcllen. Die Brote noch einmal 20 Minuten gehen lassen.<\/p>\n<p>Backofen auf 180 Grad vorheizen. Die Brote mit \u00d6l bestreichen und die Teigh\u00fclle mit einer Gabel einstechen.
